Not all sake can be aged. There is a special kind called ancient liquor, which is aged before bottling. There are also aged sake under Juyondai, which are called secret sake.

It has aromas of ripe fruits such as pears and apricots. As the temperature rises, the wine tastes softer and the aroma turns sweet.

Best paired with sauce skewers, hot pot, boiled food or seafood dishes.
